新年到了!年饼要做那一款呢?做芽菇饼吧! 过程表 1。芽菇买回来后,削皮,把不美丽或压伤的部分切掉。 2。削好皮的芽菇洗净后,放在干净布上晾干水分。 3。同时热油锅–中小火。 (如果是有3圈火烛的火炉,我的中小火就是里面最小的一圈,和最弱的第二圈。第3圈不要开。) 4。芽菇削皮。 5。不管你是先削下一堆才放进油锅,或是直接削下油锅,要记得尽量不要粘在一起。一片一片下锅,炸起来会比较均匀,不管是颜色或熟度。 不要一次过放入太多芽菇片一起炸。大概铺满油面就可以了。 不要马上兜它,这样会很容易卷起来。 放下油锅后,放它稍微定一定形才开始兜,然后炸至颜色均匀。 6。炸到大概是自己要的颜色9成后,就要捞起放到厨纸巾上摊凉和滤一些油。 (为何是9成的颜色?因为另一成是在捞起后,由于温度还很高,芽菇的颜色还是在加深。9成的颜色在最后会比较美^^会麻烦吗?) 7。摊凉后(别摊凉到过分久)就装进罐子内。 如果一次过炸比较多,那么就要注意不要把已经凉的和温热的参在一起进罐子,热气导致水蒸气的话,会导致漏风。
